What I love about Lafayette is that we don't seem to like eyesores when it comes to businesses. And that's exactly what's happening with one Johnston St site.

The small building that most recently was home to Voodoo Island Daiquiris at 4480 Johnston Street has been demolished with plans for a new building to be constructed at that location.

My buddy Jared Richard posted pictures on Facebook of the demolition that his company (Jared Richard Construction) recently finished of the old building on the property.

Here's the before and after:

So exactly what business is coming to this space?

A new location of PJ's Coffee will be built at this location. As far as a timeline regarding construction and when the coffee shop will be open, we are unsure about that at this time.

We do know that there are currently two locations of PJ's Coffee in Acadiana -- one at 1501 West Pinhook Road in Lafayette and the other in Broussard at 1137 South Bernard Boulevard.

According to PJ's Coffee's website, in addition to the Johnston Street location, another one is "Coming Soon" to Scott and will be located at 809 Apollo Road.

PJ's Coffee - A New Orleans Original

While PJ's Coffee is fairly new to the Acadiana area, New Orleanians have been enjoying the brand since 1978 when it was founded by Phyllis Jordan.

PJ's Coffee serves a wide variety of hot, iced and frozen coffee beverages, as well as organic tea and fresh breakfast pastries.

Here's something unique about PJ's. Their famous iced coffees are brewed daily using a special cold-drip process that protects the flavor and strength of the beans while producing a coffee that is 2/3 less acidic - a process pioneered by their founder.
