The wait is officially over for Lafayette's first CAVA location at 4220 Ambassador Caffery. Their neighbor, Popeyes, opened next door practically overnight, but CAVA has had local foodies sitting on the edge of their seats waiting for them to open.

What is CAVA?

If you are new here, CAVA is a Mediterranean version of Chipotle. You can build your own bowl, salad, or wrap with fresh ingredients that cater to everyone. They even offer Vegan and vegetarian options, which is something the Lafayette area could use more of.

First, choose your base: greens, grains, or both. Next, select what dips you want in your bowl or pita. My personal favorite is red pepper hummus. For the mains, you can select one or two proteins, such as harissa chicken, steak, veggie falafels, and more.

They have a wide selection of fresh and pickled veggies for toppings, and you can't forget the feta.

Lastly, choose a drizzle of the dressing or sauce to finish it off.

On Wednesday night, CAVA held its soft opening and hosted family, friends, and local foodies l from the Lafayette area.

At the soft opening, a friend of mine ordered the Harissa Avocado bowl with that extra kick we all love in South Louisiana. The bowl includes harissa honey chicken, hot harissa vinaigrette, crazy feta, fire-roasted corn, avocado, pickled onions, cucumbers, rice, and super greens.

This is just one of the many bowl variations you can finally get your hands on starting Friday.
