Baton  Rouge hosts an annual Mac & Cheese Festival. Why did I not know this?

I love Mac & Cheese. I am indifferent to the straight-out-of-the-box-run-of-the-mill Mac & Cheese, but the doctored-up stuff can be the subject of my dreams!

Add some bacon or prosciutto or crumbled-up cracklins, and you start getting my attention. Substitute the bagged/powered cheese with pepper jack or a mixture of deli cheeses, and you start getting my attention. Add some taco seasoning, cilantro, ground beef, and salsa, and you'll have my heart.

I missed the Mac & Cheese festival (it was held at Perkins Rowe this past weekend), but I plan on making it there next year!
